The botanical name of Cassia is Cinnamomum. It is also called Chinese cassia or Chinese cinnamon. It originated in China and then it was cultivated in eastern and southern Asia. The buds are used as spice especially in India and it was used in ancient Rome as well. Cassia nature identical is a spice received from the inner bark of many trees from the species Cinnamomum. It includes all kinds of evergreen trees which can be used in both sweet and savory foods. The confectionary industry uses it as a flavoring agent. This might be the reason that spices are always used a little in the dishes of India and spiced up dishes are not served every day. They are special dishes.
A Good Substitute For Cassia Oil
It is a yellow to yellow brown clear oily liquid with a boiling point of 194-2340C. It has a density of 1.03 g/mL at 250C (lit.). The refractive index is n20/D 1.592 and it is insoluble.
