The botanical name of Cassia is Cinnamomum. It is also called Chinese cassia or Chinese cinnamon. It originated in China and then it was cultivated in eastern and southern Asia. The buds are used as spice especially in India and it was used in ancient Rome as well. Cassia nature identical is a spice derived from the inner bark of many trees from the species Cinnamomum. It includes all kinds of evergreen trees which can be used in both sweet and savoury foods. The confectionery industry uses it as a flavouring agent. It forms an ingredient in many curry recipes of India, Ceylon and other south East Asian countries.

In tests conducted on rats, it is said to alleviate stress induced depressed behaviour. It is used as anti-inflammatory and immunologic drug. It is used to treat behavioural and mental problems especially disorders related to the frontal cortex and hippocampus. It is said to be a god blood thinning agent and there is a high risk if it is taken in large doses. A few other toxins are also found in Cassia. This might be the reason that spices are always used a little in the dishes of India and spiced up dishes are not served every day. They are special dishes.
A Good Substitute for Cassia Oil
It is a yellow to yellow-brown clear oily liquid with a boiling point of 194 - 2340C. It has a density of 1.03 g/mL at 250C (lit.). The refractive index is n20/D 1.592 and it is insoluble.
